Cosmic Crisp® Avocado Toast

Ingredients
- 4 slices sourdough bread
- 2 ripe avocados
- 1–2 Cosmic Crisp® apples
- Juice of ½ lemon
- A few cherry tomatoes, finely chopped
- Radishes, thinly sliced
- Fresh herbs (such as thyme, mint or dill)
- Extra virgin olive oil
- Salt and freshly ground black pepper
Method
- Toast the bread
Toast the sourdough slices in a dry frying pan or oven until golden and crisp. Set aside. - Prepare the avocado
Halve and stone the avocados. Mash the flesh with a fork and season with lemon juice, salt and pepper. - Prepare the Cosmic Crisp® apples
Slice one apple very thinly and arrange the slices into a fan. Cut the second apple into small, even dice. - Assemble the toast
Spread the avocado cream generously over the warm toast. Top with the apple fan and scatter over the diced apple. - Finish and garnish
Lightly scatter the chopped tomatoes, radish slices and fresh herbs over the top. Drizzle with olive oil and season with additional pepper if desired.
