Winter Harvest Salad with Cosmic Crisp®

Ingredients
- 1 Cosmic Crisp®, thinly sliced
- 100 g mixed greens (kale, arugula, etc.)
- 100 g roasted butternut squash cubes
- 180 g cooked quinoa
- 30 g dried cranberries
- 30 g crumbled feta cheese
- 30 g toasted pumpkin seeds
Vinaigrette
- 4 tablespoons extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 2 tablespoons Dijon mustard
- 1 large clove garlic, grated
- ½ tablespoon dried rosemary
- Salt and pepper to taste
Method
- Add all ingredients for the vinaigrette to a medium bowl or jar. Whisk or shake with the lid on until smooth and emulsified, about 15 seconds.
- In a large bowl, combine mixed greens, apple slices, roasted butternut squash, cranberries, feta cheese and pumpkin seeds.
- Drizzle with the desired amount of dressing and enjoy!
