Sandwich with Cosmic Crisp®, grilled Cheese and Pesto

Ingredients
- 2 slices of sourdough bread
- 1 Cosmic Crisp®, thinly sliced
- 60 g mozzarella cheese, sliced
- 2 tablespoons basil pesto
- Butter, for grilling
Method
- For each sandwich, spread a thin layer of butter onto one side of two slices of bread. Flip them over and spread a generous layer of pesto onto the other side.
- Layer a few slices of mozzarella and apple onto the pesto side of the bread, then top with the other slice, pesto side down.
- Butter the outer sides of the sandwich.
- Heat a skillet over medium heat and grill the sandwich until golden brown on both sides and the cheese is melted.
