Ginger and Cosmic Crisp® Kombucha Mocktail

Ingredients
- 60 ml orange juice
- ginger kombucha
- 30 ml vodka (if you want to make a cocktail)
Spiced apple reduction
- 1 Cosmic Crisp®, peeled and diced
- 180 ml water
- 2 tablespoons of honey
- ¼ tablespoon cinnamon
- ¼ tablespoon nutmeg
- ¼ tablespoon ground ginger
- ⅛ tablespoon ground cloves
Method
- Combine all the ingredients for the spiced apple reduction in a small saucepan over medium heat. Bring to a simmer, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the apples are soft and tender. Remove from the heat and blend with an immersion blender until smooth. Allow to cool to room temperature, or chill until ready to use.
- Add 1-2 tablespoons of the spiced apple reduction to the bottom of a serving glass. Add the orange juice and vodka, if using. Stir to combine.
- Fill the glass with ice, then top with kombucha and serve!
