Creamy Date Caramel with Cosmic Crisp®

Ingredients

  • 250 g pitted Medjool dates
  • 240 ml full-fat coconut milk
  • A pinch of salt
  • 1 tsp vanilla extract
  • Flaked sea salt, for topping
  • Cosmic Crisp®, sliced, to serve
Method

  1. Place the dates in a bowl and cover with warm water. Leave to soak for about 20 minutes, then drain well.
  2. Transfer the soaked dates to a high-speed blender. Add the coconut milk, salt and vanilla extract.
  3. Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy.
  4. Spoon the date caramel into a serving bowl and sprinkle with flaked salt if desired.
  5. Serve with sliced Cosmic Crisp® apples.
