Creamy Date Caramel with Cosmic Crisp®

Ingredients
- 250 g pitted Medjool dates
- 240 ml full-fat coconut milk
- A pinch of salt
- 1 tsp vanilla extract
- Flaked sea salt, for topping
- Cosmic Crisp®, sliced, to serve
Method
- Place the dates in a bowl and cover with warm water. Leave to soak for about 20 minutes, then drain well.
- Transfer the soaked dates to a high-speed blender. Add the coconut milk, salt and vanilla extract.
- Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy.
- Spoon the date caramel into a serving bowl and sprinkle with flaked salt if desired.
- Serve with sliced Cosmic Crisp® apples.
