• 1 Cosmic Crisp®, thinly sliced
• 300 g mixed salad greens
• 750 g mixed berries (e.g., strawberries, blueberries, raspberries)
• 120 g candied walnuts
• 225 g crumbled feta cheese

Vinaigrette

• 1 shallot, finely chopped
• 60 ml apple cider vinegar
• 60 g pitted dates, finely chopped
• 120 ml extra virgin olive oil
• 1 teaspoon Dijon mustard 
• Salt and pepper, to taste

1. To prepare the vinaigrette, place the shallot and vinegar in a small bowl. Leave to macerate for 10 minutes. Then, mix in the chopped dates, extra virgin olive oil, Dijon mustard and salt and pepper to taste. Set aside.
2. Add all the salad ingredients to a large bowl. Drizzle over the desired amount of date vinaigrette and toss to combine.
