Cosmic Crisp® straws and dip

Ingredients

  • 3 large Cosmic Crisp® (approx. 600–650 g), cut into sticks
  • 340 g plain strained Greek yoghurt
  • 30 g finely grated Parmesan cheese
  • 2 tbsp olive oil (approx. 30 ml)
  • 2 tsp fresh thyme leaves, finely chopped (plus thyme sprigs for garnish)
  • 1 tsp finely grated lemon zest
  • ¼ tsp salt
Method

  1. In a medium bowl, combine the yoghurt, Parmesan, olive oil, chopped thyme, lemon zest and salt. Mix until smooth.
  2. Divide the dip evenly among 10 small serving glasses (approx. 120 ml each).
  3. Divide the apple sticks evenly and arrange them upright in the dip.
  4. Garnish each serving with a small sprig of fresh thyme.
  5. Refrigerate for up to 2 hours before serving if desired.
