Cosmic Crisp® straws and dip

Ingredients
- 3 large Cosmic Crisp® (approx. 600–650 g), cut into sticks
- 340 g plain strained Greek yoghurt
- 30 g finely grated Parmesan cheese
- 2 tbsp olive oil (approx. 30 ml)
- 2 tsp fresh thyme leaves, finely chopped (plus thyme sprigs for garnish)
- 1 tsp finely grated lemon zest
- ¼ tsp salt
Method
- In a medium bowl, combine the yoghurt, Parmesan, olive oil, chopped thyme, lemon zest and salt. Mix until smooth.
- Divide the dip evenly among 10 small serving glasses (approx. 120 ml each).
- Divide the apple sticks evenly and arrange them upright in the dip.
- Garnish each serving with a small sprig of fresh thyme.
- Refrigerate for up to 2 hours before serving if desired.
