Cosmic Crisp® spice tiramisu

Ingredients
- Ladyfingers
- Coffee or apple juice
- Cocoa powder for topping
Cream layer
- 240 ml double cream
- 10 ml vanilla extract
- 150 g mascarpone
Apple layer
- 1 Cosmic Crisp®, finely diced
- 30 g brown sugar
- 30 g salted butter
- 15 ml lemon juice
- 1/2 teaspoon cinnamon
- 1/2 tablespoon cornflour mixed with 15 ml water
Method
- In a skillet over medium heat, melt butter. Add diced apple, brown sugar, lemon juice cornflour and cinnamon; cook until apples are tender and caramelised, about 5 minutes. Allow to cool.
- For the cream layer, add the double cream and vanilla extract to a medium bowl. Using an electric mixer, whip the cream until it begins to thicken. Add the mascarpone, then continue beating until the mixture is well combined and forms stiff peaks.
- Break the ladyfingers into pieces that fit the bottom of the serving glasses. Dip each piece in the apple juice or coffee for a few seconds.
- In a serving glass or dish, layer soaked ladyfingers, caramelised apples and mascarpone mixture.
- Repeat layers as desired, ending with the mascarpone mixture.
- Dust the top with cocoa powder.
- Chill for at least 1 hour before serving to allow flavours to meld.
