Cosmic Crisp® spice tiramisu

Ingredients

  • Ladyfingers 
  • Coffee or apple juice
  • Cocoa powder for topping 

Cream layer

  • 240 ml double cream 
  • 10 ml vanilla extract
  • 150 g mascarpone

Apple layer

  • 1 Cosmic Crisp®, finely diced 
  • 30 g brown sugar 
  • 30 g salted butter 
  • 15 ml lemon juice
  • 1/2 teaspoon cinnamon
  • 1/2 tablespoon cornflour mixed with 15 ml water
Method

  1. In a skillet over medium heat, melt butter. Add diced apple, brown sugar, lemon juice cornflour and cinnamon; cook until apples are tender and caramelised, about 5 minutes. Allow to cool.
  2. For the cream layer, add the double cream and vanilla extract to a medium bowl. Using an electric mixer, whip the cream until it begins to thicken. Add the mascarpone, then continue beating until the mixture is well combined and forms stiff peaks.
  3. Break the ladyfingers into pieces that fit the bottom of the serving glasses. Dip each piece in the apple juice or coffee for a few seconds.
  4. In a serving glass or dish, layer soaked ladyfingers, caramelised apples and mascarpone mixture.
  5. Repeat layers as desired, ending with the mascarpone mixture.
  6. Dust the top with cocoa powder.
  7. Chill for at least 1 hour before serving to allow flavours to meld.
