Cosmic Crisp® Parfaits

Ingredients
- 720 grams unsweetened Greek yoghurt
- Honey (optional)
- 30 g butter
- 3 Cosmic Crisp®, finely diced
- 60 g coconut sugar
- Pinch of ground cinnamon
- Pinch of ground nutmeg
Crumble topping
- 50 g rolled oats
- 30 g butter, softened
- 15 g plain flour
- 15 g coconut sugar
- Pinch of salt
Method
- Preheat the oven to 190°C (fan 170°C).
- In a small bowl, mix together the oats, butter, flour, coconut sugar, cinnamon, nutmeg and salt. Spread the mixture onto a small baking tray. Transfer the tray to the oven and bake for about 10 minutes, or until crisp, stirring halfway through. Allow to cool.
- If desired, mix the Greek yoghurt with your preferred amount of honey and set aside until ready to serve.
- In a small saucepan, melt the butter. Add the diced apples and cook for about 5 minutes.
- Add the coconut sugar, a pinch of salt and a pinch of nutmeg. Cook for another 10 minutes, stirring occasionally, until softened. Remove from the heat and allow to cool.
- To assemble the parfaits, layer the yoghurt and apples. Top with the crumble mixture and enjoy!
