Cosmic Crisp® Parfaits

Ingredients

  • 720 grams unsweetened Greek yoghurt
  • Honey (optional)
  • 30 g butter
  • 3 Cosmic Crisp®, finely diced 
  • 60 g coconut sugar
  • Pinch of ground cinnamon
  • Pinch of ground nutmeg 

Crumble topping

  • 50 g rolled oats
  • 30 g butter, softened
  • 15 g plain flour
  • 15 g coconut sugar
  • Pinch of salt
Method

  1. Preheat the oven to 190°C (fan 170°C).
  2. In a small bowl, mix together the oats, butter, flour, coconut sugar, cinnamon, nutmeg and salt. Spread the mixture onto a small baking tray. Transfer the tray to the oven and bake for about 10 minutes, or until crisp, stirring halfway through. Allow to cool.
  3. If desired, mix the Greek yoghurt with your preferred amount of honey and set aside until ready to serve.
  4. In a small saucepan, melt the butter. Add the diced apples and cook for about 5 minutes.
  5. Add the coconut sugar, a pinch of salt and a pinch of nutmeg. Cook for another 10 minutes, stirring occasionally, until softened. Remove from the heat and allow to cool.
  6. To assemble the parfaits, layer the yoghurt and apples. Top with the crumble mixture and enjoy!
