Cosmic Crisp® Olive Oil Cake

Ingredients
- 200 g all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 120 ml extra virgin olive oil
- 125 ml milk
- 2 eggs
- 1 teaspoon vanilla extract
- 200 g granulated sugar
- Icing sugar, to top
For the Apple layer
- 1 Cosmic Crisp®, peeled, cored and sliced
- ½ teaspoon ground cinnamon
- 100 g brown sugar
- 60 g unsalted butter, melted
Method
- Preheat the oven to 175°C.
- In a medium bowl, whisk together flour, baking powder, salt and cinnamon.
- In another bowl, whisk together eggs, olive oil, sugars, milk and vanilla. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, whisk together the melted butter, brown sugar and ½ teaspoon cinnamon. Pour into the bottom of a 20 cm cake tin lined with baking parchment.
- Gently pour the batter on top of the apples. If using a springform pan, place on a baking sheet to avoid leaking the syrupy bottom into the oven.
- Bake for 35-45 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow the cake to cool in the pan for 30 minutes, then transfer to a wire rack to cool completely before serving.
- Dust with icing sugar if desired, then slice and serve!
