Cosmic Crisp® Harvest Hash

Ingredients
- 1 Cosmic Crisp®, diced
- 2 sweet potatoes, peeled and diced
- 150 g Brussels sprouts, trimmed and halved
- 1 large carrot, peeled and diced
- 1 small red onion, diced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- Salt and pepper, to taste
Method
- Preheat the oven to 220°C (fan 200°C) and prepare the vegetables. Dice the sweet potato, Brussels sprouts, carrot, red onion and Cosmic Crisp®.
- Place everything on a baking tray and drizzle with oil, honey, Dijon mustard, salt, garlic powder and ground pepper. Toss everything together to coat evenly.
- Bake for 30-35 minutes, until the apples soften and the vegetables start to brown and crisp. Remove the tray halfway through cooking and tossing the vegetables to ensure even roasting.
- Serve warm and enjoy!
