Cosmic Crisp® Harvest Hash

Ingredients

  • 1 Cosmic Crisp®, diced
  • 2 sweet potatoes, peeled and diced
  • 150 g Brussels sprouts, trimmed and halved
  • 1 large carrot, peeled and diced
  • 1 small red onion, diced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
Method

  1. Preheat the oven to 220°C (fan 200°C) and prepare the vegetables. Dice the sweet potato, Brussels sprouts, carrot, red onion and Cosmic Crisp®.
  2. Place everything on a baking tray and drizzle with oil, honey, Dijon mustard, salt, garlic powder and ground pepper. Toss everything together to coat evenly.
  3. Bake for 30-35 minutes, until the apples soften and the vegetables start to brown and crisp. Remove the tray halfway through cooking and tossing the vegetables to ensure even roasting. 
  4. Serve warm and enjoy!
