Cosmic Crisp® galette with caramelised onions and gorgonzola

Ingredients
- 1 prepared pie crust (approx. 250 g), shop-bought or homemade
- 2 Cosmic Crisp® (approx. 360 g), cored and thinly sliced
- 1 large onion (approx. 200 g), thinly sliced
- 30 g butter
- 15 ml olive oil
- 60 g Gorgonzola, crumbled
- 2 tbsp honey (approx. 30 ml)
- 1 tbsp fresh thyme leaves
- Salt and black pepper, to taste
- Optional: 1 egg, beaten (for egg wash)
Method
- Preheat the oven to 190 °C and line a baking tray with baking paper.
- Heat the butter and olive oil in a large frying pan over medium heat. Add the onions and cook gently for 15–20 minutes, stirring occasionally, until caramelised. Season with salt and pepper, then set aside.
- Roll out the pie crust on a lightly floured surface into a circle about 30 cm in diameter. Transfer to the prepared baking tray.
- Spread the caramelised onions evenly over the pastry, leaving a 5 cm border around the edges.
- Arrange the apple slices over the onions.
- Sprinkle with Gorgonzola, drizzle with honey and scatter over the thyme leaves.
- Fold the edges of the pastry over the filling to form a rustic galette.
- Optional: Brush the pastry edges with beaten egg for a golden finish.
- Bake for 25–30 minutes, until the crust is golden and the apples are tender.
- Allow to cool slightly before serving. Serve warm as a main dish or sliced smaller as an appetiser or snack.
