Cosmic Crisp® crumble muffins

Ingredients
- 220 g plain flour (plus 15 grams to toss with the apple)
- 12 g baking powder
- 2.5 g salt
- 1 g ground cinnamon
- 80 g coconut sugar
- 2 eggs
- 240 ml milk
- 2.5 ml vanilla extract
- 120 g butter, melted and cooled
- 1 Cosmic Crisp®, finely diced
Crumble
- 30 g plain flour
- 30 g coconut sugar
- 50 g oats
- 2.5 g sea salt
- 60 g cold butter, cubed
Method
- Preheat the oven to 175°C and line a muffin tin with paper liners.
- In a small bowl, combine all the crumble topping ingredients and use a fork to cut the butter into the mixture until a crumble forms. Set aside.
- In a separate bowl, mix together the flour, baking powder, salt and cinnamon until well combined.
- In another mixing bowl, whisk together the coconut sugar, eggs, milk, vanilla extract and melted butter until smooth and combined.
- Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Toss the diced apples with the additional 15 grams of flour, then fold them into the batter.
- Divide the batter evenly between the muffin paper liners, then generously top each one with the crumble mixture.
- Bake for 25-35 minutes, checking for doneness at the 20-minute mark. The muffins are ready when a skewer or toothpick inserted into the centre comes out clean.
- Allow the muffins to cool completely before serving. Enjoy!
