Cosmic Crisp® coffee cake

Ingredients
Streusel
- 120 g plain flour
- 100 g brown sugar
- 50 g white sugar
- ¼ tsp salt
- ½ tbsp ground cinnamon
- 75 g salted butter, melted
Cake
- 75 g salted butter, softened
- 100 g white sugar
- 120 g sour cream
- 2 eggs
- ½ tsp vanilla extract
- 150 g plain flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ¼ tsp salt
- 1 Cosmic Crisp® (approx. 180 g), peeled and grated
Method
- Preheat the oven to 180 °C.
- In a medium bowl, whisk together all streusel ingredients until crumbly and well combined.
- In a large bowl, beat the softened butter and sugar with an electric mixer on medium speed for 1–2 minutes.
- Add the eggs and beat until pale and fluffy, about 30 seconds. Add the sour cream and vanilla extract and mix until combined.
- Add the flour, baking powder, bicarbonate of soda and salt. Mix until just combined; do not overmix. The batter will be thick.
- Squeeze excess liquid from the grated apple using a clean tea towel or paper towels, then fold into the batter.
- Spread half of the batter into a greased 20–25 cm cast iron skillet. Sprinkle evenly with half of the streusel. Add the remaining batter and finish with the remaining streusel.
- Bake for 30–40 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool for 20–30 minutes before slicing and serving.
