Cosmic Crisp® coffee cake

Ingredients

Streusel

  • 120 g plain flour
  • 100 g brown sugar
  • 50 g white sugar
  • ¼ tsp salt
  • ½ tbsp ground cinnamon
  • 75 g salted butter, melted

Cake

  • 75 g salted butter, softened
  • 100 g white sugar
  • 120 g sour cream
  • 2 eggs
  • ½ tsp vanilla extract
  • 150 g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 1 Cosmic Crisp® (approx. 180 g), peeled and grated
Method

  1. Preheat the oven to 180 °C.
  2. In a medium bowl, whisk together all streusel ingredients until crumbly and well combined.
  3. In a large bowl, beat the softened butter and sugar with an electric mixer on medium speed for 1–2 minutes.
  4. Add the eggs and beat until pale and fluffy, about 30 seconds. Add the sour cream and vanilla extract and mix until combined.
  5. Add the flour, baking powder, bicarbonate of soda and salt. Mix until just combined; do not overmix. The batter will be thick.
  6. Squeeze excess liquid from the grated apple using a clean tea towel or paper towels, then fold into the batter.
  7. Spread half of the batter into a greased 20–25 cm cast iron skillet. Sprinkle evenly with half of the streusel. Add the remaining batter and finish with the remaining streusel.
  8. Bake for 30–40 minutes, or until a skewer inserted into the centre comes out clean.
  9. Allow to cool for 20–30 minutes before slicing and serving.
