Cosmic Crisp® bliss bites

Ingredients
- 1 Cosmic Crisp®, cored
- 100 g oats
- 50 g almond flour
- 60 g almond butter
- 20 g shredded coconut
- 35 g chopped almonds
- 40 g dark chocolate chips
- 5 ml vanilla extract
- 50 g chopped nuts (e.g., almonds, walnuts)
- ½ teaspoon ground cinnamon
- Pinch of sea salt
Method
- Preheat your oven to 175°C. Line a baking tray with baking parchment and set it aside.
- In a food processor, pulse the Cosmic Crisp® apples until finely chopped. Transfer the chopped apples to a large mixing bowl.
- Add the oats, almond flour, maple syrup, almond butter, shredded coconut, chopped almonds, dark chocolate chips, vanilla extract, ground cinnamon and a pinch of sea salt to the bowl with the chopped apples.
- Mix all the ingredients together until well combined. The mixture should be sticky and hold together when pressed.
- Using a tablespoon, scoop the mixture and roll it into compact balls using the palm of your hands. Place the bliss bites onto the prepared baking tray, spacing them evenly apart. Top with additional coconut and chocolate chips if desired.
- Bake in the preheated oven for about 10 minutes or until the edges are golden brown.
- Remove the baking tray from the oven and allow the bliss bites to cool completely on a wire rack.
- Once cooled, transfer the bliss bites to an airtight container and chill for at least 30 minutes to allow them to firm up.
- Serve chilled.
