Cosmic Crisp® and sweet potato puff pastry bites

Ingredients
- 1 sheet puff pastry (about 250 g)
- 115 g white cheddar cheese, shredded
- 1 medium sweet potato, peeled and thinly sliced
- 1 Cosmic Crisp®, thinly sliced
- 15 ml honey
- 0.5 g sage
- Salt and pepper to taste
- 1 egg
Method
- Preheat oven to 200°C.
- Roll out the puff pastry sheet and cut into 9 squares (or 12 smaller ones).
- Place the sweet potato and apple slices in a bowl.
- Add honey, sage, salt, and pepper.
- Mix until all slices are coated.
- Place the pastry squares as diamonds on a parchment-lined baking tray.
- Divide the cheese evenly, placing a mound in the centre of each diamond.
- Layer 5–6 slices (3–4 if 12 squares) of apple and sweet potato on top, alternating slices.
- Pinch opposite corners together to seal.
- Beat the egg and brush over the pastry.
- Bake for 15–18 minutes until golden brown.
- Let cool for 5 minutes before serving.
