Cosmic Crisp® apple and sweet potato puff pastry bites

Ingredients

  • 1 sheet puff pastry (about 250 g)
  • 115 g white cheddar cheese, shredded
  • 1 medium sweet potato, peeled and thinly sliced
  • 1 Cosmic Crisp®, thinly sliced
  • 15 ml honey
  • 0.5 g sage
  • Salt and pepper to taste
  • 1 egg
Method

  1. Preheat oven to 200°C.
  2. Roll out the puff pastry sheet and cut into 9 squares (or 12 smaller ones).
  3. Place the sweet potato and apple slices in a bowl.
  4. Add honey, sage, salt, and pepper.
  5. Mix until all slices are coated.
  6. Place the pastry squares as diamonds on a parchment-lined baking tray.
  7. Divide the cheese evenly, placing a mound in the centre of each diamond.
  8. Layer 5–6 slices (3–4 if 12 squares) of apple and sweet potato on top, alternating slices.
  9. Pinch opposite corners together to seal.
  10. Beat the egg and brush over the pastry.
  11. Bake for 15–18 minutes until golden brown.
  12. Let cool for 5 minutes before serving.
