Cosmic Crisp® and brussels sprouts puff pastry bites

Ingredients
- 1 sheet of puff pastry (about 250 g)
- 115 g white cheddar cheese, shredded
- 45–65 g Brussels sprouts, thinly sliced
- 1 Cosmic Crisp®, thinly sliced
- 15 ml honey
- 0.5 g thyme
- Salt and pepper to taste
- 1 egg
Method
- Preheat oven to 200°C.
- Roll out puff pastry and cut into 9 squares (or 12 for smaller bites).
- Place apples and Brussels sprouts in a bowl.
- Add honey, thyme, salt, and pepper.
- Mix until well coated.
- Place pastry squares as diamonds on a lined baking tray.
- Divide cheese evenly into the centre of each square.
- Top with Brussels sprouts and apple mixture.
- Pinch opposite corners together.
- Beat egg and brush over pastry.
- Bake 15–18 minutes until golden.
- Cool 5 minutes before serving.
