Cosmic Crisp® apple and Brussels sprouts puff pastry bites

Ingredients

  • 1 sheet of puff pastry (about 250 g)
  • 115 g white cheddar cheese, shredded
  • 45–65 g Brussels sprouts, thinly sliced
  • 1 Cosmic Crisp®, thinly sliced
  • 15 ml honey
  • 0.5 g thyme
  • Salt and pepper to taste
  • 1 egg
Method

  1. Preheat oven to 200°C.
  2. Roll out puff pastry and cut into 9 squares (or 12 for smaller bites).
  3. Place apples and Brussels sprouts in a bowl.
  4. Add honey, thyme, salt, and pepper.
  5. Mix until well coated.
  6. Place pastry squares as diamonds on a lined baking tray.
  7. Divide cheese evenly into the centre of each square.
  8. Top with Brussels sprouts and apple mixture.
  9. Pinch opposite corners together.
  10. Beat egg and brush over pastry.
  11. Bake 15–18 minutes until golden.
  12. Cool 5 minutes before serving.
