Cosmic Crisp® and Peach Aperol Spritz

Ingredients
- 1 Cosmic Crisp®, finely diced
- 280 g fresh or frozen peaches
- 50 g white sugar
- 60 ml water
- 60 ml Aperol
- Prosecco
- Sparkling water
Method
- In a skillet over medium-low heat, combine apples, peaches, sugar and water. Simmer until the apples and peaches are soft and have slightly cooked down, about 10-15 minutes.
- Blend the mixture until completely smooth. If it is too thick, add water to achieve a pourable consistency.
- In a glass with ice, pour about 30 ml or the desired amount of the fruit compote and 60 ml of Aperol.
- Top with Prosecco until the glass is ¾ full, then add a splash of sparkling water.
- Garnish as desired and enjoy.
