Cosmic Crisp® and Lemon Custard Tart

Ingredients

  • Pastry for a single-crust 23 cm tart
  • 150 g sugar
  • 75 g butter or margarine, melted
  • 3 large eggs
  • 75 ml lemon juice
  • 2 tbsp plain flour (approx. 15 g)
  • 2 Cosmic Crisp®, peeled, cored and thinly sliced
  • 3 tbsp apple jelly (approx. 60 g)
Method

  1. Preheat the oven to 220 °C. On a lightly floured surface, roll out the pastry into a 28 cm round. Line a 25 cm tart tin with the pastry and lightly prick the base with a fork. Bake for 8–10 minutes, until lightly golden. Remove and set aside.
  2. Reduce the oven temperature to 190 °C. In a large bowl, beat the sugar and melted butter until combined. Add the eggs one at a time, beating well after each addition. Mix in 60 ml of the lemon juice and the flour.
  3. Pour the custard mixture into the pre-baked tart shell. Arrange the apple slices evenly on top. Bake for 20–25 minutes, until the filling is set.
  4. Meanwhile, prepare the glaze: in a small saucepan, gently heat the remaining 15 ml lemon juice with the apple jelly, stirring until melted.
  5. Spoon the glaze over the warm tart. Allow to cool completely before serving.
