Cosmic Crisp® and Lemon Custard Tart

Ingredients
- Pastry for a single-crust 23 cm tart
- 150 g sugar
- 75 g butter or margarine, melted
- 3 large eggs
- 75 ml lemon juice
- 2 tbsp plain flour (approx. 15 g)
- 2 Cosmic Crisp®, peeled, cored and thinly sliced
- 3 tbsp apple jelly (approx. 60 g)
Method
- Preheat the oven to 220 °C. On a lightly floured surface, roll out the pastry into a 28 cm round. Line a 25 cm tart tin with the pastry and lightly prick the base with a fork. Bake for 8–10 minutes, until lightly golden. Remove and set aside.
- Reduce the oven temperature to 190 °C. In a large bowl, beat the sugar and melted butter until combined. Add the eggs one at a time, beating well after each addition. Mix in 60 ml of the lemon juice and the flour.
- Pour the custard mixture into the pre-baked tart shell. Arrange the apple slices evenly on top. Bake for 20–25 minutes, until the filling is set.
- Meanwhile, prepare the glaze: in a small saucepan, gently heat the remaining 15 ml lemon juice with the apple jelly, stirring until melted.
- Spoon the glaze over the warm tart. Allow to cool completely before serving.
