Coconut chia pudding with maple Cosmic Crisp® apples

Ingredients

Chia pudding

  • 360 ml unsweetened coconut milk
  • 80 g unsweetened coconut yogurt
  • 25 g vanilla protein powder – optional
  • 40 g chia seeds
  • Coconut flakes - optional

Maple apples

  • 2 Cosmic Crisp® apples, finely diced
  • 80 ml water
  • 20 ml pure maple syrup
  • Pinch of salt
Method

  1. Combine the coconut milk, yogurt, and protein powder in a high-speed blender and blend until smooth.
  2. Pour the mixture into a bowl and whisk in the chia seeds. Cover and refrigerate for at least 2 hours or overnight. If the pudding is thickened too much, add a splash of coconut milk and mix until desired consistency is reached.
  3. Meanwhile, add the diced apples to a saucepan with water and place over medium heat. Cover and let steam until the apples are fork tender and the water has evaporated. Add the maple syrup and a pinch of salt and sauté until the apples begin to caramelize.
  4. Serve the apples on top of the chia pudding. It is optional to serve while they are warm or let them cool completely. Garnish with coconut flakes if desired.
