Coconut Chia Pudding with Maple Cosmic Crisp® Apples

Ingredients
Chia pudding
- 360 ml unsweetened coconut milk
- 80 g unsweetened coconut yogurt
- 25 g vanilla protein powder – optional
- 40 g chia seeds
- Coconut flakes - optional
Maple apples
- 2 Cosmic Crisp® apples, finely diced
- 80 ml water
- 20 ml pure maple syrup
- Pinch of salt
Method
- Combine the coconut milk, yogurt, and protein powder in a high-speed blender and blend until smooth.
- Pour the mixture into a bowl and whisk in the chia seeds. Cover and refrigerate for at least 2 hours or overnight. If the pudding is thickened too much, add a splash of coconut milk and mix until desired consistency is reached.
- Meanwhile, add the diced apples to a saucepan with water and place over medium heat. Cover and let steam until the apples are fork tender and the water has evaporated. Add the maple syrup and a pinch of salt and sauté until the apples begin to caramelize.
- Serve the apples on top of the chia pudding. It is optional to serve while they are warm or let them cool completely. Garnish with coconut flakes if desired.
