Chai Cosmic Crisp® Mini French Toasts

Ingredients

  • 2 eggs
  • 120 ml milk
  • 2 tbsp maple syrup (approx. 30 ml)
  • 1 Cosmic Crisp® (approx. 180 g), grated
  • 3 croissants (approx. 180–200 g), roughly torn

Chai Spice Mix

  • 1 tsp chai spice (shop-bought or homemade)
  • ½ tbsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • A pinch of ground cloves
Method

  1. In a small bowl, mix together all ingredients for the chai spice.
  2. In a large bowl, whisk together the milk, eggs and maple syrup. Add 1 tsp of the chai spice mix (reserve the rest for another recipe).
  3. Stir in the grated apple, then gently fold in the torn croissants.
  4. Leave to soak for 15–30 minutes. Meanwhile, preheat the oven to 180 °C.
  5. Lightly grease a muffin tin and spoon the mixture evenly into the cups.
  6. Bake for about 30 minutes, or until golden brown, firm and puffed up. Remove from the oven and allow to cool slightly before serving.
