Chai Cosmic Crisp® Mini French Toasts

Ingredients
- 2 eggs
- 120 ml milk
- 2 tbsp maple syrup (approx. 30 ml)
- 1 Cosmic Crisp® (approx. 180 g), grated
- 3 croissants (approx. 180–200 g), roughly torn
Chai Spice Mix
- 1 tsp chai spice (shop-bought or homemade)
- ½ tbsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground cardamom
- ¼ tsp ground nutmeg
- A pinch of ground cloves
Method
- In a small bowl, mix together all ingredients for the chai spice.
- In a large bowl, whisk together the milk, eggs and maple syrup. Add 1 tsp of the chai spice mix (reserve the rest for another recipe).
- Stir in the grated apple, then gently fold in the torn croissants.
- Leave to soak for 15–30 minutes. Meanwhile, preheat the oven to 180 °C.
- Lightly grease a muffin tin and spoon the mixture evenly into the cups.
- Bake for about 30 minutes, or until golden brown, firm and puffed up. Remove from the oven and allow to cool slightly before serving.
